Angus Paul possesses an ardent love for South African heritage varietals, with a specific focus on Chenin Blanc, Pinotage, and Cinsault. Embracing the philosophy of minimal intervention winemaking, he skilfully combines these elements to produce exceptional wines.
This particular Chenin Blanc originates from a remarkable vineyard situated at the top of a hill in the esteemed Polkadraai Hills region, renowned for its exceptional Chenin Blanc production. The vines, mature and weathered, thrive in the stony granite soils, enduring the relentless Cape South Easter winds, ultimately yielding a vibrant and invigorating expression of Chenin Blanc.
The grapes were delicately pressed as whole bunches, and the resulting cloudy juice was carefully transferred to neutral oak barrels. Notably, no sulphur, yeast, acid, or enzymes were added during this process. Fermentation took place within the barrels, with approximately 50% undergoing Malolactic fermentation as well.
This Chenin Blanc reveals enchanting aromas of orchard blossoms, ripe green apple, and pear, harmoniously balanced by a creamy note originating from the 50% malolactic fermentation. The vibrant primary fruit flavours are complemented by the distinct nuances of seashells and flint, characteristics that the Polkadraai Hills appellation imparts to Chenin Blanc
