Bat Gara was started in 2012 by restaurateur Jose Cruz Guinea and farmer Jose Maria Gotxi, both Basque natives with winegrowing experience. They wanted to highlight the particular quality of the Arabako Txakolina sub-region, with its clay soil and close proximity to the Atlantic. Their 6 hectares of sustainably farmed vineyards are tucked in between oak and pine forests, on hillsides looking to the sea.
Uno is 95% Hondarribi Zuri with 5% Riesling, hand harvested, gently pressed and then fermented in stainless steel with natural yeasts. It is then aged on lees for 6 months to help soften the edges and increase the depth.
An incredibly pure and racy wine, with great concentration coming from the low yielding vines. Smoky and flinty notes vie with crunchy green apple fruit with broad acidity that maintains the flavour through a deliciously long finish. A unique and extremely delicious wine that would beautifully pair with fried calamari or whitebait.
