Beare Green is the new project (2022 was the first vintage) of wine educators and owners of Streatham Wine House bar Jimmy Smith and Bethany Paterson and winemaker Sam Hill. Based in Beare Green, Surrey they source grapes from a number of trusted growers in the south of England for their range of wines. In the cellar they are strictly minimal intervention, fermenting without adding yeast, sugar, enzymes or other adjuncts. Their wines are very low in sulphites as well.
Dex is named in memory of a greyhound that Jimmy and Bethany rescued who passed away recently. The wine is a rose made from 100% Pinot Noir from St Mary's vineyard just up the road from us in Falmer. They keep it in contact with the skins a little longer than your typical rose, giving a slightly darker colour and more intense flavours.
Cranberry, orange zest and some earthy and herbal complexity on the nose - you really feel that this is Pinot Noir with its alluring aroma. On the palate it is bone dry with excellent precision and length of flavour, a rose you could pair with serious food - tuna tataki or grilled chicken with tahini sauce for example.
