Four generations of the Sabate family have grown vines in the Bitlles Valley in Catalunya. Their 40 hectares are composed of 66 different plots spanning 18 different soil types, this patchwork of terroir is the foundation of their wines. All of their vines are farmed organically and they make both sparkling Corpinnat and still wines.
The So Blanc is a brilliant representation of the Xarel-Lo grape variety, sourced from a number of parcels on different soils to give an authentic and balanced interpretation. A short maceration with the skins before fermentation and ageing on the lees have added lovely depth and body to the crisp fruit flavours.
Pineapple, fennel, apple and mineral notes are all apparent on the charming nose, leading into a well-balanced palate with fleshy yellow fruits and lovely freshness. A delicious white that can handle rich flavours like paella or seafood stews.
