Jean Paul and Benoit Droin are 14th generation winemakers in a family synonymous with Chablis. Their 26 hectares of vineyards are fractured in many tiny plots including parcels of five Grand and 9 Premier Crus. Benoit's expertise after over 20 years in the cellar translates to Chablis of beautiful crystalline precision and lovely depth of flavour.
The village Chablis comes from a blend of plots totalling around 9 hectares, with both grey marl and Kimmeridgian limestone soils. Fermentation and aging is exclusively in stainless steel to maintain the pure, crisp style. A long aging on the fine lees is essential to the development of this refined wine, harmonizing the sharp acidity and mineral flavours with the fruit.
Generous and lively, packed with lemony fruit and flinty minerality. Typical of great Chablis there is a suggestion of oyster shell in the aroma alongside delicate white flower notes. Long, pure and elegant, a perfect wine to pair with white fish, shellfish or gravad lax.
