From their 4ha of organic vineyards in Central Otago Folding Hill craft utterly sublime Pinot Noir. The warmth of the Bendigo subregion and meticulous work in the vineyard gives their wines a lovely core of ripe red fruit. In the cellar they work in an old-world fashion - fermentation with wild yeast, 11 months ageing in French oak and bottling without fining or filtration.
The nose is packed with red cherries and berries, alongside savoury earthy complexity. The tannins are silky smooth and the fresh fruit lingers through a long finish, touched by a little oak spice. Enjoy this wine with game, roast chicken or mushroom dishes.
