Los Siete Misterios is passionately dedicated to highlighting the spirit, heritage, and tradition of Mezcal.
Named after the ancient Zapotec term for Agave Espadin, Doba-Yej, this mezcal is meticulously crafted from agave sourced from the towns of Matalan, San Dionisio, and Yautepec in Oaxaca. Harvested only when fully mature, the agave piñas undergo a traditional process, starting with cooking in stone-lined pits. Subsequently, the cooked piñas are hand-milled with a wooden mallet or through a horse-drawn tahona.
The resulting aguamiel and fibres undergo spontaneous fermentation in open wooden vats, culminating in a double distillation process in copper pot stills for the musto. This careful and traditional method ensures that Los Siete Misterios captures the authentic essence of Mezcal, reflecting the rich heritage and artistry behind this revered spirit.
Complex and balanced with a smooth and smoky flavour intertwined with notes of caramel and citrus. A great example of traditional techniques married with modern refinement.
