This is a unique twist on the classic Appassimento method which usually brings to mind, bold, plush reds like Amarone. This style takes it in a new direction using Garganega to produce a stunning white. Every step of its production is crafted to amplify richness and intensity. The grapes are dried on special racks to concentrate their sugars and aromas. After pressing, the wine is left on its skins to enhance texture and deepen flavours, with a portion aged in oak for added creaminess.
The resulting wine is bold and fruit-forward with a luscious balance of fresh citrus and rich apricot and peach notes. Perfectly indulgent, it pairs beautifully with roast chicken.
