Matthieu Deiss, the son of the renowned Marcel Deiss, has carved his own winemaking path with his intimate domaine. At the helm of crafting these wines is his partner, Emanuelle Milan, who hails from the lineage of the illustrious Henri Milan in the South of France. Both deeply committed to organic and natural winemaking practices, they bring a wealth of generational expertise to their craft.
Nestled primarily in the commune of Bennwihr, just beyond the Kaysersberg valley, the domaine's vineyards are grounded in Quaternary rocks, fostering a terroir that imparts aromatic richness, freshness, and youthful vitality to the wines. The commitment to natural winemaking is evident throughout the process – from the absence of sugar additions, acidification, and commercial yeast during alcoholic fermentation in large oak barrels, to a patient aging of one year on fine lees before bottling with minimal sulphites.
The resulting wine is a dry symphony of lime, lemon verbena, chamomile, apple, and quince, radiating brightness. This creation works as a splendid aperitif and pairs exquisitely with a diverse array of dishes, including cured fish, slightly spicy preparations, and creamy dishes. The balance of tradition, terroir, and minimal intervention shines through in every sip, reflecting the true essence of their winemaking philosophy.
