Founded in Aÿ in 1893, Collery released its first vintage in 1895 and earned a Gold Medal in Paris by 1904. Since then, the estate has been dedicated to producing exceptional Champagne, delighting connoisseurs and sparkling wine enthusiasts alike. Cellar Master Julien Lefevre, born and raised in Champagne, brings extensive experience from working with multiple Champagne houses, blending wines in both vats and barrels to achieve perfect balance.
A golden hue with subtle green highlights and fine bubbles forming a creamy ring. The initial aroma is intense, featuring red fruit syrup notes like raspberry and black cherry, along with apple jelly. As it opens up, delicate hints of toast and salinity emerge. Fresh and expressive on the palate, with flavours of apple, pear, and honey. These same aromas persist through to the finish, offering a satisfying, lingering taste.

Whilst packing up to move internationally a friend died and I needed to organise an emergency case of something luscious to support the wake. Not only did their wonderful team organise and deliver within an incredibly tight deadline they drafted a message for me too which I approved. Wonderful!!

Sourcing Stock
Henry and Team managed to locate some difficult to find American wine which they kindly offered and I gratefully accepted. They truly differentiate by being able to surprise by sourcing stock very much outside the run of the mill.

This was my second visit to Butlers Wine Cellar and on both occasions the service has been wonderful. The young lady assisted me and my wife on a number of purchases of wine and sherry and seemed very knowledgeable and made us feel welcome. Having tasted them she was spot on with her comments on each bottle. I would highly recommend anyone to use this shop.
