Perello Pitted Gordal Picante Olives (150g) - £3.95 Pairs with

Mauricio Lorca Calma Indomita Albarin Blanco 2023 - £16.75

These plump and fleshy Spanish olives have a touch of heat from their Guindilla chilli marinade. The rich buttery texture and spicy, briny and slightly sweet taste makes them an ideal pairing for a fruity and aromatic dry white like this beautiful Albarin from Castilla y Leon in Spain. Not to be confused with the more famous Albarino, this is a fuller-bodied white with aromas of orange zest, almond blossom and ripe peaches and a subtle bitterness on the palate that works excellently with the olives!

Cas'Amaro Falatorio Sercial Reserva 2020 - £21.50

Rich, oily and flavoursome, these sardines come from Ramirez in Portugal, the oldest operating cannery anywhere in the world. All that bold oily flavour works best with a bone dry wine, where the powerful acidity can cut through the fattiness of the canned sardines. The Falatorio Sercial does just that, from an organic coastal vineyard north of Lisbon, this lightly oaked white has intense notes of citrus fruits, sea salt and cedar. This combination will transport you to the coast of Portugal!

Alvaro Domecq Manzanilla La Jaca - £22.50

Pairings don't get much more textbook than anchovies and Manzanilla, the briny meaty flavours of the former working perfectly with the dry, saline minerality of the latter. Zallo are located in the Basque country, using the finest anchovies from the Cantabrian sea with a robust yet refined flavour. The small Alvaro Domecq sherry house age this Manzanilla in solera for an average of four years, giving more body and yeasty notes alongside olive brine and green apple.

Bodegas Lustau Amontillado Los Arcos - £24.50

Grown in the Mediterranean climate of Catalunya, these big flavoursome almonds are fried then simply salted. Lovely with a cold beer, they also excel alongside the dry, nutty flavour of an Amontillado sherry. Crafted by the outstanding Lustau sherry house, the Los Arcos sees 8 years of combined solera aging, partially under flor and partially oxidative, giving its distinct dried fruit, hazelnut and smoke aromas. 

Cantara Mackerel Pate (75g) - £3.90 Pairs with

Rezabal Txakoli Rose 2023 - £14.99

This lovely mackerel pate from Portugal combines high quality fish with olive oil, tomato and hot pepper to give a full and complex taste. The tomato flavour pairs very nicely with the light red fruit notes of this excellent Basque rose, made from Hondarrabi Beltza grapes grown in the hills overlooking the Cantabrian sea. It's bracing freshness and delicate spritz are delightful alongside the bold flavour of the pate.
